Chick Pea, Feta and Cucumber Salad
This is a refreshing summer salad to eat alone or as a side. An easy recipe to enjoy at the lake!
2 cans Garbanzo Beans / Chick Peas rinsed and drained
1 Cucumber Sliced and quartered
1 Small Red Onion sliced and chopped
2 oz Feta Cheese
10-15 Cherry Tomatoes quartered
3 TBS Red Wine Vinegar
3 TBS Olive Oil
2 TBS garlic
1 TBS lemon juice
3 TBS Fresh Chopped Parsley
