Broccoli salad in the summer is one of our favorites! I won't bore you with the stories of side salads and main courses but add this to your lake day must haves! This makes a big batch, enough for your family and your guests!
Summer Broccoli Salad
1 Large bag of broccoli florets separated and cut into bite sized pieces
1/2 Red Onion diced
6 slices of bacon crumbled
4 ribs celery diced
4 T fresh parsley chopped
6 oz grated cheddar cheese
1/2 cup rasins (optional)
Dressing;
3/4 c Dukes Mayo
3/4 c Ranch Dressing
4 T Sugar or sweetener of your choice
generous shake of salt & pepper
Chop all veggies and place in a large bowl. Mix all the dressing ingredients and pour over veggies. Stir in bacon, cheese and raisins and refrigerate.
Best served lakeside!
